Malay Satay Sauce

For a truly authentic satay sauce, this sauce will be something you’ll want to try. A delicious mix with a real peanut crunch. If you like it hot, simply add more chilli powder or flakes. This sauce is the bomb on chargrilled beef or chicken. Be careful though… its addictive


2 tsp Coriander Seeds
1 tsp Fennel seeds
1 tsp Ground cumin
.5 tsp Chilli Powder
2 tbsp Peanut Oil
2 Onions, Finely chopped
1 Garlic Clove, finely chopped
100g Peanuts, roasted and roughly ground
1 tsp Shrimp paste
1 can 400g Coconut milk
4 tbsp Tamarind water (Tamarind paste mixed with 1 cup water)
1 tsp Brown Sugar
.5 Lemon, juice strained
Salt to taste

Meat prep

Cut your meat of choice into large cubes and thread onto skewers
Grill your meat over charcoal to get a nice char on the meat basting periodically with peanut oil

Sauce Prep

At the spices to a mortar and pestle and crush together
Heat the oil in a fry pan and fry off the onion, garlic, spices, shrimp paste until cooked and aromatic
Add the peanuts and the coconut milk, tamarind water, and sugar – stir well
Simmer sauce for 10 mins
Before serving, add lemon juice and salt to taste


Either use the sauce as a dipping style sauce or pour sauce over the top of skewers.
